3/4 cup pitted and chopped dates
100g butter at room temperature
1 teaspoon vanilla extract
1/4 cup milk at room temperature
1/2 cup chopped cooking chocolate or choc chips
3/4 cup boiling water
1/2 cup caster sugar
1 egg
1/4 teaspoon bicarbonate soda
1 + 3/4 cup self raising flour
Preheat oven to 180 degrees (C). Line a muffin tin with patty pans (paper cases).
Pour the boiling water onto the chopped dates and add the butter in pieces so that it melts. Stir.
Add sugar then leave to cool a little.
Mix in the egg, vanilla and soda dissolved in the milk.
Sift flour into the liquid and stir until just combined. Add the chocolate last and stir through lightly.
Half fill your cases for average sized muffin or fill 3/4 for large muffins.
Bake for 15 – 20 minutes or until golden brown.
These are equally good eaten warm or cool. Enjoy!

OH, not me we love dates…they add such a gentle sweetness. These look yummy.

they look good, but with the dates in them…..icky, icky, icky…..don't like dates, which really sucks as I love the whole concept of Sticky Toffee Pudding!!!
